Allow optional fields

At the moment, Parseur requires all fields to be present in order to match it with a template.

Add a way to set some fields optional.

This would be very useful , some emails may or may not have a value that can be parsed, however both scenarios are valid. Downstream systems can process either result as they do not make the field mandatory. If it is not found simply provide a empty " " result. The alternative is creating a template for every eventuality , which could run into several templates and beyond.

The OCR engine including optional fields is now live! It currently only works with PDFs. Let us know if you'd like to extend this engine to emails as well.
