Allow manual editing of AI-generated parsing logic

We sometimes want to manually edit the AI-generated parsing logic. This is vital for dealing with certain inputs, and is one of the two key reasons we are unable to adopt Parseur. (We really like what we see, out of those two reasons!)

I'm not sure to understand this request. Could you elaborate, maybe with an example? Would the custom AI parsing logic only apply to a single document? A set of documents?
