Add confidence value when retrieve data

It would be really helpful to have Parseur confidence when retrieve data to setup checks in the post processing to push some information or not.

Accuracy Metrics Export: It would be highly beneficial if the OCR parser could display the accuracy percentage of various extracted fields and export this data as metadata during post-processing. This feature would help me better assess and trust the extracted information.

Retrieve a reliability index per extracted field.
The reliability index would compare the extracted data with those extracted.
The reliability index could be a score from 0 to 1.
This would allow a user to verify information that has a low reliability index.
